We have an appointment with a USDA inspected meat processor for two of our lambs to be inspected and processed! If you have tried to have livestock processed in the last few years you know that they are booked at least 6 months in advance. Some butchers are so overwhelmed that they can only take return customers. Many do not process lamb or goat. I filled out a contact form for several processors inquiring about next year and to see if they had any cancellations this winter. I received a call from the manager of Moonlight Meats that day. He was helpful and informative and pleasant. I was so impressed that they took time with a little outfit like ours. They were able to squeeze our two lambs in at the end of October which is perfect timing to harvest our lambs. If all goes well we will be able to offer a limited amount of retail lamb meat for sale. We will offer this for local pick up only. We deliver our lambs for inspection and processing October 25th. We are not set up to ship fresh or frozen meat.
